Sadie’s Kitchen Mac & Cheese
I had a blast visiting Damien and Peter of Sadie’s Kitchen on my show. I love Brooklyn and my friend/producer Rebecca H. James was so on point for suggesting we visit these guys. The mac and cheese is beyond delicious and so we decided to offer you all the recipes of my two favorites! Bake, eat and enjoy! Let me know what you think!!! Paul
Two great Mac & Cheese recipes from Sadies Kitchen
FIFi’s
for 6-8 people
cook one pound of your favorite mac and cheese pasta and set aside
make a béchamel sauce with the fallowing
1 quart whole milk
1/2 of 1/2&1/2
2 bay leafs
grated nutmeg ( 1/4 tsp)
salt and pepper ( 1/4 tsp each)
Simmer on med heat for 20 minutes until the milk draws in the flavor and comes to a rolling boil
Stir in 4 tablespoons of cornstarch added to 1/2 cup warm water . The mixture will thicken turn down to low heat.
Add to the Béchamel the following:
1 cup grated swiss
1 cup grated Emmental
1 cup grated gruyere cheese
1/2 grated romano
1 cup crumbled bacon
1/2 cup finely chopped chives
Stir constantly until all the cheese in melted into the béchamel.
Turn off heat and add pasta. Pour mixture into butter greased baking dish ( around 4 inches)
Top with more cheese and bake until golden brown.
SADIES WITH BACON
for 6-8 people
cook one pound of your favorite mac and cheese pasta and set aside

salt and pepper ( 1/4 tsp each)

1 cup grated ramano
1 cup grated Fontina
1 cup sliced grape tomatos
1/2 cup of sliced green onion
1/2 cup crumpled potato chips
stir constantly until all the cheese in melted into the béchamel. Turn off heat and add pasta. Pour mixture into butter greased baking dish ( around 4 inches) top with more cheese and bake until golden brown.
